Trahanas, an Ancient Traditional Staple

Trahanas is made of flour and milk, letting the mixture ferment, then drying and usually grinding and sieving by hand the result.

Since the ancient years, trahanas boiled in water has been a light and healthy meal low in calories and high in nutrition. 

There are various types of trahanas throughout Greece. The two most popular ones are, sour and sweet.

The last years though it has also been used in modern Greek cuisine as an ingredient of more gourmet dishes. 

Nobody knows for sure its exact origins. Some say it is Turkey, some Persia or maybe Arabia.

Tip: Do not add olive oil during its boiling procedure. Instead prefer adding some fresh on top of it, at the end of the cooking time. Some prefer it served with grated feta cheese.
